Although 3-Michelin-starred Spanish molecular gastronomy mecca El Bulli closed for good July 30, 2011, its work as an ingenious generator of avant-garde cuisine lives on in Gereon Wetzel’s immaculately crafted documentary. The small restaurant, which served a pricey 30+ course tasting menu, operated a limited season from July to December. It closed for the other six months so that chef/owner Ferran Adria and his creative team could devise new dishes at a state-of-the-art test kitchen in Barcelona.
In the test kitchen, we see white smock-clad head chefs Oriol Castro, Eduard Xatruch and Mateu Casanas work like scientists, experimenting with recipe ideas and meticulously documenting (and tasting) the results. The burly Adria samples their efforts between cell phone conversations, and issuing refinements, reminding them of the necessity of engaging the emotions as well as all five senses.
At the midpoint, the action moves to the restaurant, located in a remote and beautiful spot overlooking the Cala Montjoi Bay near the town of Roses in the Catalonia region of Spain, to show Adria and staff prepare for the new season opening. Expediters and station chefs are assigned their places. New dishes are gradually woven into the menu and refined until Adria gives a final stamp of approval. Adria devotees, don’t despair: El Bulli cookbooks are available, and Ferran and his brother have announced a new tapas restaurant and cocktail bar in Barcelona.
